Recipe: Peel 2 cloves of garlic, chop and fry in vegetable oil. Catch the garlic and fry the onion in thin rings in the same oil. Remove the onion and place 300-400 grams of diced pumpkin in a frying pan. If the pumpkin starts to burn, add water. Add onion and parsley, salt. Add pre-boiled spaghetti (300 grams) to our pumpkin, stir and simmer for another 3-4 minutes in a frying pan. Before serving for dinner or breakfast, sprinkle with cheese - preferably Parmesan.

Recipe: In fact, it is very simple. Cook a glass of rice until half cooked with ¼ cup of raisins, fried onions and carrots. Make a well in the flour (1 heaped tablespoon) and pour one egg into it. Knead the dough and roll it out as thinly as possible. Next, you need to melt the butter (1 tsp) in a bowl with a thick bottom and place our flatbread on the butter, and rice on top. Simmer until done. Meanwhile, peel and cut the pumpkin into cubes, roll in flour and fry in oil. The finished dish is served as follows - prepared rice is placed in the center of the tray, pumpkin and raisins fried in a frying pan are placed on top.

Sweet pumpkin porridge
Another pumpkin porridge recipe. At your discretion, it can be made sweet or bland. It all depends on the amount of sugar that will be thrown in initially.
Recipe: Peel and cut the pumpkin into pieces, pour 1.5 cups of milk over it and put on low heat - let it boil well. Cool the finished pumpkin and pass through a sieve. Boil rice in milk (1 cup rice to 3 cups milk). Mix the prepared porridge with pumpkin and place in the oven for 10 minutes to form a golden brown crust. Be sure to add butter, and before starting the meal, add sweet cream and sprinkle with sugar.

Candied pumpkin
Perhaps one of the most interesting dishes that few people have heard of. It is not easy to prepare; it requires a certain skill from the cook.
Recipe: Candied pumpkin is prepared in three stages. On the first day, you need to take a medium pumpkin, peel and seeds, cut into cubes and sprinkle with sugar - 400-500 grams. During the night the pumpkin should give a lot of juice and in the morning the pan with it will be filled with liquid. We don’t drain it, but put it on the fire, bring it to a boil and cool it. Make syrup from sugar, remaining juice and citric acid. Then pour hot syrup over the pumpkin and simmer gently over low heat until tender. At the last stage, place the pieces in a colander to drain the juice, and dry them in the oven for 2-2.5 hours at a low temperature of 50-80 degrees. For dusting, it is recommended to use powdered sugar mixed with cinnamon.

Pumpkin with egg
A very simple dish that even a novice cook can prepare.
Recipe: Traditionally, we cut the pumpkin into cubes (500 grams) and simmer in butter until tender. To prevent the pumpkin from turning out dry, you can add a little water. Along with this, beat 1 egg with sour cream in a bowl and add salt. Pour the simple mixture into the frying pan with the pumpkin and sprinkle with basil. Reduce heat and simmer for 3-4 minutes under the lid. The dish is not very tasty when cold, so it is best to serve it “hot or hot.”

Pumpkin pie
We continue the extravaganza of pumpkin desserts, next up is a sweet pie. It is very important to get the pumpkin pie cooking time right, otherwise it will turn out watery and the bottom will burn.
Recipe: First of all, you need to bake the pumpkin (600 grams) separately in the oven. It takes about an hour to do everything. When it cools, scoop out the pulp and mash thoroughly with a spoon. You can also use a combine for these purposes. Place 4 cups of flour, 1 teaspoon of cinnamon, 1.5 cups of sugar, half a cup of chopped nuts and the same amount of seedless raisins into a bowl. Add 4 eggs and prepared pumpkin. Mix everything and puree in a blender. Pour the finished dough (it should be liquid) into a mold and bake for an hour in an oven heated to 180 degrees.

Pumpkin pancakes are a great alternative to potato pancakes. Meanwhile, this dish is much healthier, since it is prepared not fried, but baked. The main ingredient, of course, is pumpkin.
Recipe: Grate raw pumpkin (1 cup), add 1-2 chicken eggs, spices and salt to taste. Mix well, adding a little Parmesan and flour until the dough becomes thick. The aroma, by the way, is simply fantastic! Line a baking tray with baking paper coated with olive oil and lay out the pumpkin cakes. Bake for literally 10-15 minutes at a temperature of no more than 200 degrees.

Pumpkin sticks breaded with cheese
But this dish can serve as an excellent seasonal snack! Cooking time is only 30 minutes.
Recipe: Peel the pumpkin from inedible parts, cut into small sticks - about 400 grams. Grate 200 grams of cheese and mix. Prepare a batter from 1-2 eggs, salt and pepper. Dip each pumpkin stick in flour, then dip in egg and finally coat in cheese. It is better not to fry, but to bake in an oven preheated to 200 degrees. The readiness of the dish can be judged by the color of the pumpkin sticks - they should acquire a golden color.

Eggplant-pumpkin caviar
Pumpkin and eggplant caviar will go on any sandwich. Agree, it is much more nutritious and healthier than sandwiches with sausage or margarine. Moreover, it is no less tasty than traditional squash.
Recipe: Cut 300 grams of peeled pumpkin into cubes and simmer in a frying pan. Add chopped vegetables to the frying pan in the following order: bell pepper (1 piece), 2 onions, 2 large or 3 medium eggplants, one sweet and sour apple, 2 tomatoes, 5 cloves of garlic. What happens if you use pumpkin instead of baking foil? That's right, a new dish. Which, moreover, is also incredibly tasty, although it is prepared from available products!
Recipe: Peel 500 grams of pumpkin and cut into thin slices. Place one half in a mold and add salt. Place 300 grams of pollock fillet (cut into pieces) on it and sprinkle with the rest of the pumpkin, chopped parsley or other herbs. Pour the pumpkin and fish with a mixture of 3 eggs and 500 ml of kefir, place in an oven preheated to 200 degrees for 40 minutes. Delicious both hot and cold.

Chicken legs stuffed with pumpkin
The good thing about stuffed chicken legs is that you can use almost anything you have on hand as a filling. We will experiment with pumpkin, which will give the dish incredible juiciness.
Recipe: Separate the chicken skin from the meat, being careful not to damage it. Like a stocking, we pull the skin off the leg and trim it if it doesn’t want to come off on its own. Using a knife, cut the bone and tendons. Grind the resulting meat (take 2 kg of legs) using a meat grinder along with three onions and 300 grams of peeled pumpkin. Fill the stockings with the resulting minced meat and secure. Tuck the long edge of the leather inside the stocking - then it will not fall apart. Grease the legs with mayonnaise, sprinkle with grated cheese and bake in the oven for 30 minutes. Make sure that the temperature does not exceed 200 degrees, otherwise the stuffed chicken legs will burn.

Pumpkin and rhubarb jelly
Strictly vegetarian dish, calorie content - only 93 kcal per 1 serving. The preparation is simple, but there are some nuances.
Recipe: Chop 300 grams of peeled pumpkin in a blender. Wash the rhubarb (300 grams) and cut into thin pieces. Remove the zest from the lemon using a regular vegetable peeler and cut into thin ribbons. Pour 5 cups of water into the pan, adding sugar, zest and 2 cinnamon sticks. When the water boils, boil for literally 5-6 minutes. Throw the rhubarb into the resulting syrup and boil for another 2-3 minutes. Add pumpkin, and when the syrup boils again, cook for 7-8 minutes. Mix 125 ml of water with 3 tbsp. starch, stir thoroughly. Place the pumpkin and rhubarb in a blender and grind, adding a small amount of broth. Then mix with the rest of the broth, pour in the diluted starch in a thin stream and cook until thickened. Pour into glasses, cool.

Smoothie with raspberries and pumpkin
When you're short on vitamins in the fall, smoothies with pumpkin and raspberries can be an excellent source of nutrients. If you don’t have fresh raspberries on hand, frozen ones are a great substitute.
Recipe: Line the bottom of a baking sheet with foil. Cut 300 grams of peeled pumpkin into slices and, greased with vegetable oil, place on a baking sheet. Bake at 180 degrees for 30 minutes. Place the pumpkin in a blender and add 1 sliced ​​banana with a handful of raspberries. Pour all this over 300 ml of drinking yoghurt, adding a tablespoon of oatmeal and powdered sugar to taste. Beat until liquid, pour into glasses. Finally, garnish with mint leaves.

Cottage cheese casserole with apples and pumpkin
Cottage cheese and pumpkin casserole goes equally well with a glass of warm milk and a cup of tea or coffee. A great start or end to the day!

As you know, not a single Maslenitsa is complete without pancakes. The holiday of farewell to winter is still far away, but that won’t stop us from making nutritious and satisfying pancakes straight from pumpkin.
Recipe: Grate 1 kg of peeled pumpkin on a fine grater, adding spices and sugar. Add 1 cup of premium flour and knead into a homogeneous dough. Form pancakes, fry on both sides in heated vegetable oil. Serve with jam or honey.

Recipe: Take 200 grams of flour and add salt on the tip of a knife. From flour and kefir, to which you need to add a little soda, knead a soft dough. Finely chop one onion and fry in oil in a frying pan. Add 300 grams of grated pumpkin to the onion, 1 tsp. sugar, ¼ teaspoon salt, black pepper to taste and fry for another 5-7 minutes. Prepare a sausage from the dough, cut it into 12 pieces and roll each piece into a circle. We put the filling on one circle, cover it with another and fix it, form a pie, squeezing the edges of the dough like dumplings. Lightly fry in a frying pan so that the dough holds, and then grease with sour cream and bake for 20 minutes in the oven at 200 degrees.
