In the absence of a thermometer, small bubbles appearing on the surface of the brew will indicate that the drink has reached the specified temperature. Boiling is strictly prohibited! The foam is removed with a slotted spoon. The pasteurized liquid is poured into jars, which must be preheated, and sealed.


Method 2. To prepare apple juice for the winter The second method will require a large saucepan. After pasture, the raw drink is poured into jars of suitable capacity, without preheating them. And then the filled dishes are covered with lids without rolling them up and placed in a previously prepared wide pan, into which water is also poured. The water level should not reach 1 cm from the neck of the container. The container is covered with a lid and placed on low heat to heat the water to 85 C. Having reached the desired temperature, the fire is reduced and pasteurized, maintaining the specified temperature. The duration of heat treatment depends on the volume of the selected cans: for 0.5-1 liters - 20 minutes, for 2-3 liters - half an hour. Once pasteurized, the hot container is carefully removed one at a time and immediately sealed. To avoid getting burned when removing cans, use a kitchen towel folded several times, oven mitts, or special tongs.

3 way. The third option involves boiling for 5 minutes. It is immediately necessary to make a reservation that in such a preparation, more than half of the vitamins will be lost; but the freshness of the taste will be completely preserved. This method is used in cases where there are doubts about the original quality of apples taken for processing. For example, if they are overripe or there is no time and opportunity to sort them before spinning. To check the tightness of the closure, the closed container is turned over and left to cool, covered with a blanket. The cooled preservation is turned over again to its original position and stored in a cool, dark place.


Once prepared, it is advisable to sign each jar, indicating the service life (about two years). And it’s worth going back and mentioning the addition of granulated sugar to the drink. Whether or not to add this sweetener is an individual question. It depends on the sweetness of the fruit and the taste preferences of the cook and his family. Fruits naturally contain sugar and acids, which are natural preservatives. And the inclusion of additional sugar is optional!


Blending

Blending is the combination or combination of the main ingredient with additional ones. During this process, the goal is to improve the original taste, add more benefits, diversify, dilute or make it less concentrated. So, “Apple juice” preparation for the winter itself is quite rich. It is often diluted with boiled chilled water or still mineral water. In addition, an excellent solution to this issue is blending, that is, preparing mixed juices. To do this, apples are combined with pumpkin, grapes, carrots, chokeberries and even zucchini.


"Pumpkin option"

Pumpkin juice is extremely valuable for the body. But not everyone can appreciate its taste. He's too specific. This is another reason to mix it with apple drink. To do this, the pumpkin is washed, peeled from the outer hard peel and internal seeds along with the fibrous mass, and steamed until softened. Then the pulp is rubbed on a sieve or simply ground in a blender. By the way, when using a blender, it is not necessary to boil the pumpkin first. The resulting moderately thick puree is poured into the apple drink. The ratio of these two components is arbitrary and is oriented according to your own taste. The mixture is pasteurized or sterilized and, poured into jars, is rolled up.

Or you can not bother making pumpkin puree, but pass the pulp cut into pieces through a juicer immediately after the apples. After mixing, the liquid is heated for 5 minutes and pumpkin-apple juice for the winter poured into previously prepared glass bottles.


Another opportunity to make a drink with pumpkin for future use involves having: 5 large apples, 3 cups of chopped pumpkin pulp, 1 cup of water, a pinch of cinnamon, 1 tsp. vanilla, a quarter glass of lemon juice. More precisely, the workpiece will turn out in the form of a puree.

The apples for puree are washed, the skin is cut off, and they are cut in half, cutting out and removing the cores. The remaining clean pulp is cut into slices. The slices are transferred to a cooking container, sprinkled with ground cinnamon, poured with lemon juice and mixed. Afterwards, the apple slices are filled with water, and the dishes are placed on high heat, where they are brought to a boil. After boiling, the fire intensity decreases, and the mass is cooked for 45 minutes until softened. Boiled fruits are combined with previously prepared pumpkin pulp. And in the blender, the ingredients are “turned” into puree, grinding them to maximum homogeneity. Sometimes a masher is used for this purpose, but in this case the fruits may remain in small pieces. Right in the device, the puree is seasoned with spices and mixed. The result is a fairly thick mass, which is boiled for 5 minutes and packaged hot in a container.


Apple juice for the winter: “With carrots”

Well, the “apple-carrot” combination has been familiar to everyone since childhood. Like pumpkin, it’s impossible to drink just like that. But combined with apple – very good indeed! So, the root vegetables are peeled, washed thoroughly and cut into convenient pieces. And then they are steamed and passed through a juicer or rubbed on a sieve. The carrot-apple mixture - in the form of a puree or juice - is canned after pasteurization or hot filling (the methods described above are used). Thanks to the inclusion of orange vegetables, apple juice is enriched with B vitamins and carotene.

Here is another option for making a winter drink from apples and carrots. For it you will need: apple and carrot juice in a 2:1 ratio, as well as 100 g of granulated sugar. The prepared fruit ingredients are washed, dried and doused with boiling water. Then, individually, they are crushed and squeezed out in any convenient way, measuring the required amount of liquid. Next, the resulting juices are mixed with each other, poured into an enamel pan and sugar is poured into them. Having dissolved the grains, the solution is heated and boiled for about 3-4 minutes. Literally boiling apple and carrot juice for the winter poured into sterilized jars and closed with scalded lids.


Apple juice for the winter: “Zucchini blend”

With the help of zucchini, the apple drink is perfectly softened. Of course, at first glance it sounds somewhat strange... But if you try, you can be convinced of the opposite. In addition to its great taste, it is also rich in minerals and calcium. The method “with zucchini” is not worth describing in detail. Or you can take one of the technologies proposed above as a basis; for example, in the version with carrots.


Apple juice is also blended with other juices: raspberry, sea buckthorn, currant and viburnum. In this case, both pasteurization and pasteurization can be used. As can be seen from the described processes of home preservation, the preparation of these preparations is quite easy. Both children and adults love these healthy and natural drinks.
